Ingredients
  

  • 1 cup fresh or frozen raspberries
  • ½ cup olive oil
  • 3 tbsp red wine vinegar or apple cider vinegar
  • 2 tbsp honey or maple syrup
  • 1 tsp Dijon mustard
  • Salt and black pepper to taste

Method
 

  1. Blend raspberries until smooth.
  2. Add vinegar, honey, and Dijon mustard; blend again.
  3. Slowly drizzle in olive oil while blending to emulsify.
  4. Season with salt and pepper.
  5. Adjust to taste and serve.

Notes

  • Strain for a seedless version if desired
