Ingredients
  

  • Muffins
  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tbsp cocoa powder
  • ¾ cup vegetable oil
  • ¾ cup buttermilk
  • 2 eggs
  • 2 tbsp red food coloring
  • 1 tsp vanilla extract
  • 1 tsp white vinegar
  • Cream Cheese Filling
  • 8 oz cream cheese
  • ¼ cup sugar
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mix dry ingredients.
  3. Combine wet ingredients separately.
  4. Beat cream cheese filling until smooth.
  5. Fill liners halfway with batter.
  6. Add cream cheese filling and top with batter.
  7. Swirl gently and bake 20–22 minutes.
  8. Cool before serving.

Notes

  • Do not overmix batter
  • Chill muffins for cleaner cream cheese center
