Ingredients
  

  • cups rice
  • 3 cups water or broth
  • 1 lb chicken breast
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup broccoli
  • 1 cup bell peppers
  • ½ cup onion

Method
 

  1. Cook rice until tender and fluffy.
  2. Season chicken evenly.
  3. Cook chicken in skillet until done.
  4. Sauté vegetables until tender-crisp.
  5. Serve chicken and vegetables over rice.

Notes

  • Adjust seasoning to taste
  • Use brown rice if preferred
