Ingredients
  

  • 3 cups shredded rotisserie chicken
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup diced bell peppers
  • 1 cup sliced mushrooms
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup shredded mozzarella cheese
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp Italian seasoning
  • 1 tbsp chopped parsley

Method
 

  1. Sauté onion and garlic in olive oil.
  2. Add vegetables and cook until tender.
  3. Stir in shredded chicken.
  4. Add broth, cream, and seasonings; simmer 8–10 minutes.
  5. Stir in cheese until melted.
  6. Garnish and serve warm.

Notes

  • Do not overcook the chicken.
  • Add broth if sauce thickens too much.
  • Great served over rice or pasta.
