Ingredients
  

  • 1 can 14–15 oz salmon, drained and flaked
  • ½ cup breadcrumbs
  • 1 large egg
  • ¼ cup finely chopped onion
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 tablespoons fresh parsley chopped
  • 2 tablespoons olive oil for frying
  • Optional Add-Ins / Toppings
  • Chopped green onions
  • Dijon mustard
  • Red pepper flakes
  • Fresh dill
  • Lemon wedges
  • Tartar sauce

Method
 

  1. Drain the canned salmon and flake it in a bowl.
  2. Add breadcrumbs, egg, onion, mayonnaise, lemon juice, and seasonings.
  3. Mix until a firm mixture forms.
  4. Shape the mixture into evenly sized patties.
  5. Heat olive oil in a skillet over medium heat.
  6. Cook patties for 3–4 minutes per side until golden brown.
  7. Remove from the skillet and drain on paper towels.
  8. Serve warm with lemon wedges or dipping sauce.

Notes

Store leftovers in the refrigerator for up to 3 days.
• Add extra breadcrumbs if the mixture feels too soft.
