Method
- Preheat oven to 425°F (220°C) and grease sheet pan
- Press dough evenly into pan
- Toss potatoes with olive oil, salt, and pepper
- Brush dough with oil, add garlic, potatoes, and cheese
- Bake 22–25 minutes until golden and crisp

Slice potatoes very thin to ensure even baking.
