Ingredients
  

  • 1 lb shrimp
  • 1 onion
  • 3 cloves garlic
  • 1 tbsp ginger
  • 1 tbsp curry powder
  • 1 cup coconut milk
  • ½ cup tomato puree
  • 2 tbsp oil
  • Salt to taste

Method
 

  1. Season shrimp lightly and set aside.
  2. Sauté onion, garlic, and ginger in oil.
  3. Add spices and bloom briefly.
  4. Stir in tomato and coconut milk; simmer.
  5. Add shrimp and cook until just done.

Notes
