Ingredients
  

  • 12 oz lo mein noodles
  • 1 lb shrimp peeled and deveined
  • 1 cup carrots julienned
  • 1 cup bell peppers sliced
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 tablespoons neutral oil
  • 3 green onions sliced
  • Sauce
  • ¼ cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon brown sugar
  • 1 teaspoon cornstarch
  • ½ cup water

Method
 

  1. Cook noodles according to package instructions; drain and set aside.
  2. Heat oil in a pan and cook shrimp until pink; remove and set aside.
  3. Sauté garlic and ginger, then add vegetables and cook until tender-crisp.
  4. Whisk sauce ingredients together and pour into the pan.
  5. Add noodles and toss until coated and sauce thickens.
  6. Return shrimp to the pan and toss gently until heated through.
  7. Garnish with green onions and serve hot.

Notes

  • Do not overcook shrimp; remove as soon as they turn pink.
  • Adjust soy sauce to control saltiness.
  • Add chili oil for heat if desired.
  • Use fresh vegetables for best texture.
  • Reheat with a splash of water to loosen sauce.
