Ingredients
  

  • 1 can whole kernel corn drained (15 oz)
  • 1 can creamed corn 14.75 oz
  • 1 cup sour cream
  • ½ cup unsalted butter melted
  • 2 large eggs
  • 1 cup cornmeal baking mix
  • ¼ tsp salt

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Grease a casserole dish lightly.
  3. Mix corn, creamed corn, eggs, sour cream, butter, and salt.
  4. Stir in cornmeal baking mix gently.
  5. Pour into dish and smooth top.
  6. Bake 40–45 minutes until set and lightly golden.
  7. Rest briefly before serving.

Notes
