Ingredients
  

  • Filling
  • 2 cups fresh spinach finely chopped
  • ¾ cup feta cheese crumbled
  • ¼ cup onion or scallions chopped
  • 1 clove garlic minced
  • 1 tablespoon olive oil
  • ½ teaspoon dried dill or oregano
  • Black pepper to taste
  • Dough
  • cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 eggs
  • ¼ cup Greek yogurt or milk
  • 3 tablespoons olive oil

Method
 

  1. Preheat oven to 180°C (350°F).
  2. Squeeze moisture from spinach and mix with feta, herbs, and seasoning.
  3. Combine dough ingredients until soft.
  4. Fold filling into dough.
  5. Shape into small cookies and place on baking tray.
  6. Bake until lightly golden and set.

Notes

  • Squeeze spinach thoroughly.
  • Use block feta for better texture.
  • Best served warm or slightly cooled.
