Ingredients
  

  • Chicken & Veggies:
  • 4 –6 boneless skinless chicken breasts
  • 1 can 20 oz pineapple chunks, drained
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 2 cloves garlic minced
  • 1 tsp grated fresh ginger
  • 2 tbsp cornstarch + 2 tbsp water optional
  • 1 tbsp sesame seeds optional
  • 2 green onions sliced (optional)
  • Sauce:
  • Reserved pineapple juice
  • ¼ cup soy sauce
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp minced garlic
  • ½ tsp crushed red pepper flakes optional

Method
 

  1. Place chicken in crockpot.
  2. Whisk together sauce ingredients; pour over chicken.
  3. Add pineapple chunks and bell peppers.
  4. Cook low 4–6 hours or high 2–3 hours.
  5. (Optional) Thicken sauce with cornstarch mixture and cook 10–15 minutes.
  6. Garnish with sesame seeds and green onions before serving.

Notes

  • Adjust sweetness and tanginess to taste.
  • Add extra vegetables or pineapple for a tropical twist.
  • Freezes well for up to 2 months; thaw before reheating.
