Method
Bake and mash sweet potatoes.
Mix with egg and flour to form dough.
Shape into gnocchi pieces.
Boil until floating.
Prepare sauce and toss gnocchi.
Notes
Avoid overmixing dough
Freeze uncooked gnocchi if needed
Serve immediately
