Ingredients
  

  • 2 medium sweet potatoes
  • 1 ½ cups flour
  • 1 egg
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 tbsp butter
  • 2 cloves garlic
  • 1 cup heavy cream
  • ½ cup Parmesan

Method
 

  1. Bake and mash sweet potatoes.
  2. Mix with egg and flour to form dough.
  3. Shape into gnocchi pieces.
  4. Boil until floating.
  5. Prepare sauce and toss gnocchi.

Notes

  • Avoid overmixing dough
  • Freeze uncooked gnocchi if needed
  • Serve immediately
