Ingredients
  

  • Cookies
  • 2¼ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup unsalted butter
  • ¾ cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup strawberry jam
  • Cheesecake Filling
  • 6 oz cream cheese
  • ¼ cup powdered sugar
  • ½ tsp vanilla extract

Method
 

  1. Mix cheesecake filling and freeze in small scoops.
  2. Cream butter and sugars until fluffy.
  3. Add egg and vanilla.
  4. Mix dry ingredients and combine gently.
  5. Wrap dough around frozen filling.
  6. Bake at 350°F (175°C) for 12–14 minutes.
  7. Cool before serving.

Notes

  • Freeze filling fully before baking
  • Avoid overbaking
