Ingredients
  

  • 1 tbsp olive oil
  • 1 onion
  • 3 cloves garlic
  • 2 carrots
  • 2 celery stalks
  • 6 cups vegetable broth
  • 1 cup vegan chicken
  • cups noodles
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp thyme
  • ½ tsp parsley
  • 1 bay leaf

Method
 

  1. Sauté onion, carrots, and celery in olive oil.
  2. Add garlic and seasonings; stir briefly.
  3. Pour in broth and bay leaf; simmer.
  4. Add vegan chicken and noodles; cook until tender.
  5. Remove bay leaf and serve warm.
