Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound Italian sausage
  • 1 small onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 3 medium potatoes sliced
  • 1 cup heavy cream
  • 2 cups chopped kale
  • ½ teaspoon red pepper flakes
  • Salt and black pepper to taste

Method
 

  1. Heat olive oil in a large pot and cook the sausage until browned.
  2. Add diced onion and cook until soft, then stir in garlic.
  3. Pour in chicken broth and add sliced potatoes.
  4. Simmer until potatoes are tender.
  5. Add chopped kale and cook for several minutes.
